High Cotton’s Slaw (Outer Banks, NC) | We're Not There Yet

High Cotton is the very highly regarded BBQ restaurant in the Outer Banks.  When the owner, Will, opened the restaurant, he thought back to the best slaw he’d ever had.  Growing up in the BBQ mecca of Rocky Mount, NC, his best slaw was at Josh Bullocks, a restaurant that had operated for 50 years before closing (and which hosted the first televised political rally in NC history).  Using a string of family acquaintences, Will finally located Josh Bullock’s granddaughter, who put him in touch with an old cook. This is the best slaw that we’ve had, and we’ve had a lot of slaw.

  • white cabbage, cut at a ¼” dice (amount of cabbage is based on how saucy you like your slaw.)
  • 1 gallon mayonnaise
  • 2 cups yellow mustard
  • 3 cups white vinegar
  • 3 cups white sugar
  • 2 Tbs. celery salt
  • 2 Tbs. black pepper

Mix ingredients other than cabbage, and then mix in with cabbage till desired consistency is reached.
